The victory was the 300th of head coach Joe Nesci's career with the Violets. Nesci, now in his 18th season, has accumulated a 300-140 career mark.
The Violets (3-0) never trailed in the game, opening with a 20-7 streak and never leading by less than 10 points the rest of the way.
NYU took its largest lead of the first half, 34-16, on junior Matt Basford's three-pointer with 2:14 remaining before settling for a 34-18 halftime lead.
The Violets' onslaught continued in the second half as their advantage rose to a game-high 41 points, 80-39, on freshman Michael Miller's three-pointer with 55 seconds remaining.
In all, 13 different Violets scored in the contest. Junior Michael DeCorso led the team with 13 points, while senior Jared Kildare and junior Jason Boone added 12 and 11, respectively. Sophomore Michael Magee contributed a career-high nine points.
The Violets dominated the boards, as well, out-rebounding the Soaring Eagles 45-28. Junior Daniel Falcon led NYU with 12 boards, while DeCorso, Boone and junior Chael Clark each had seven.
Micah Owens led Elmira (0-2) with 11 points.
NYU will now play in Sunday's 7pm Thanksgiving Tournament Championship Game against either the United States Merchant Marine Academy or Polytechnic University.
